I usually think of freezer fudge when I’m in the mood for a rich chocolate treat. It’s one of the easiest things to prepare and I love how fuss-free it is with just one bowl and no baking involved. This time I decided to use tahini as the main ingredient since it was one of the few things I found in my almost empty fridge. But also because chocolate and tahini are a match made in heaven! Don’t you think?!

Salted Chocolate Tahini Fudge Ingredients

This melt-in-your-mouth salted chocolate tahini fudge is the best dessert to make if you’re looking for a fool-proof, no-bake recipe that can be prepared in less than 10 minutes. Here’s what you’ll need:

  • Tahini: While tahini is the star of this recipe and lends its unique nutty earthy flavor to the fudge, you could swap it with another nut or seed butter based on what you have available.
  • Cacao powder: I like to use raw cacao powder instead of regular or dutch-processed because it’s minimally processed and retains more of the enzymes and nutrients found in the cacao beans. It has a stronger, more bitter cacao flavor, which is balanced by the sweetness of maple syrup.
  • Pure maple syrup: My favorite natural, unrefined sweetener to use. If you don’t have maple syrup, you could opt for raw honey instead.
  • Coconut oil: Melted coconut oil is what helps solidify the fudge. If don’t care for the coconut flavor, you have two options:
    • Use refined coconut oil which has no distinct coconut taste or aroma.
    • Use melted cacao butter for a smooth texture and a rich, chocolaty flavor.
  • Sea salt: Adding a pinch of coarse sea salt (such as Maldon sea salt) enhances the flavor and adds a crunchy, savory contrast to the smooth, sweet texture of the dessert. However, be sure to use it sparingly, as too much salt can overpower the sweetness and ruin the balance of flavors.

How to Melt Cacao Butter

If you choose to use cacao butter, be sure to melt it the right way. It’s important not to overheat the cacao butter, as this can cause it to lose its nutritional properties and affect the flavor and texture of your final product. Melting it in the microwave or directly over the stovetop, even on low heat, can cause it to scorch and develop a burnt flavor.

To melt cacao butter, fill a small pot about 1/4 full with water and bring it to a boil. Reduce heat to a simmer and fit a heat-resistant bowl on top. The bottom of the bowl should not reach the water (at least 2″ to 3″ space between the bowl and water). The intention is to heat the bowl with steam and not water. Chop cacao butter into small chunks and place in the bowl. Stir the cacao butter occasionally until it has melted and is smooth. This salted chocolate tahini fudge recipe couldn’t get any easier! All you need is one bowl to mix everything in. If you’re using a brand of tahini that’s not runny and has a firmer texture, then I would suggest adding everything to a small pot over low heat for easier mixing. Otherwise, just combine everything in a bowl with a spoon or spatula, pour into an air-tight, freezer-safe container, and freeze for 1-2 hours until firm. Cut into squares and enjoy!

Ingredients

  • 1/2 cup (130 g) tahini
  • 3 tablespoons (22 g) raw cacao powder
  • 2 tablespoons (40 g) pure maple syrup
  • 4 tablespoons (40 g) coconut oil or cacao butter, melted {See Notes}
  • Pinch of coarse sea salt

Instructions

  • Mix all ingredients together in a bowl until you get a smooth even mixture.
  • Line a 5x7 inch (or similar-sized) dish with parchment paper and pour in the mixture. Freeze for at least 2 hours, then cut into squares and enjoy.
