It’s been a hot summer in Vancouver and all I’ve been craving lately is fruits, salads, smoothies, and frozen treats!

I had just finished making a batch of my Greek-style coconut yogurt when I started wondering if I could use it to make a frozen yogurt treat similar to a chocolate bark. Well, the whole thing was wiped clean in 2 days, so I’m calling it a big success!

It’s one of the easiest recipes ever with only 4 ingredients! As mentioned I made mine dairy-free and vegan by using thick plain coconut yogurt, but you can also make it with plain organic Greek yogurt or any other non-dairy yogurt you normally use. Just add a bit of vanilla and maple syrup, top it with berries, and freeze! So refreshing on a hot day and a much healthier alternative to refined sugar and heavy cream-laden ice cream.

Frozen Yogurt Berry Barks

Yields ~20 servings

Ingredients

  • 2 cups thick non-dairy yogurt OR plain organic Greek yogurt
  • 3 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup berries (I used blueberries and red currants)

Directions

  1. Add the first 3 ingredients to a medium-sized bowl and stir to combine
  2. Spread the mix onto a parchment paper-lined baking sheet and top with berries
  3. Freeze until firm, about 3 hours or overnight. Cut into barks and enjoy!
  4. Store leftovers in the freezer and let them sit at room temperature for about 15 minutes before serving
