I finally have a new waffle maker! I’m beyond excited because I love waffles and ever since my old waffle maker died on me couple of years back I’ve been on the hunt for the perfect waffle maker. I’m rather picky when it comes to buying new appliances and have to do extensive research first, so it took me a while! I finally found one that is rather compact, is reasonably priced, and most importantly has ceramic non-stick surfaces. The only downside is that the plates are non-removable, but it was either removable plates or ceramic (couldn’t find a decent product with both unfortunately), so I chose ceramics. Anyways, so far I’ve been really happy with my waffle maker and been putting it into good use! This is what it looks like by the way, if you’re also looking for one (not sponsored).

I have lots of ideas for savory waffles that I will test and share with you soon, but the first few times it just had to be regular plain waffles served with pure maple syrup, some of my leftover “cream cheese” sauce made with cashews and coconut yogurt, and lots of berries. I just can’t get enough of this combo! The recipe is very simple, adapted from my quick and easy fluffy pancake recipe, consisting of 3 main ingredients: oats, non-dairy milk, and banana. I also like to add vanilla and cinnamon for more flavor and baking powder and apple cider vinegar for a fluffier texture. That’s it! So simple, easy to memorize and prepare.

Are you team waffle or team pancake? It’s so hard for me to choose, I love them both dearly. But I find waffles easier to make, since you can just leave them in the machine, go do your thang and come back–whereas with pancakes, you have to keep a close eye on them, flip them, and make sure they don’t burn. Easy Blender Waffles

Serves 2

Ingredients

  • 1 and 1/4 cups steel-cut or rolled oats
  • 1 cup non-dairy milk (coconut, almond, hemp, etc.)
  • 1 large banana
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon

Directions

  1. Add all ingredients to the blender and blend for a few seconds until you get a smooth mixture, but don’t over-mix
  2. Heat up your waffle maker. Once ready, brush the surfaces with a bit of coconut oil. Pour a large dollop (about 2 tbsp) of the batter in the middle and close the lid. Do not open for 4-5 minutes or until the “ready” light/beep comes on (depending on the model of your waffle maker you may or may not have this option) and the waffle maker starts to steam. You can leave the batter in longer for darker and crispier waffles
  3. Serve with pure maple syrup, coconut yogurt, this dreamy chocolate caramel sauce, or this dairy-free “cream cheese” sauce. Top with fruits, nuts, seeds, coconut flakes, etc. and enjoy!
