Coconut Snowballs
These coconut snowballs are quick & easy to make, delicious, and free from grains, dairy, and refined sugar. All you need is a food processor and less than 15 minutes!

Ingredients
- 1 and 1/2 cups cashews
- 1 cup unsweetened shredded coconut + 3 tablespoons for coating (optional)
- 3 tablespoons pure maple syrup
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- Pinch of sea salt
Instructions
- Blend the cashews and shredded coconut in the food processor for a couple of minutes until the oils start to release. If needed, take a break in between, scrape the sides with a spatula, and get the food processor going again.
- Add the rest of the ingredients and pulse for a few more seconds to fully combine.
- Roll into balls and coat in some extra coconut shreds, if desired, and enjoy!
