This Chocolate Pumpkin Rawnola is a no-bake 5-minute recipe, perfect for your fall breakfasts or snacks. It’s nut-free, grain-free, gluten-free, oil-free, vegan, and can be easily customized.

I’m so excited to share a super simple fall-inspired rawnola recipe with you today that can transform your breakfasts from good to phenomenal! It’s made with 2 of my favorite ingredients: chocolate and pumpkin. I’ve been taking full advantage of fall flavors and adding pumpkin to all kinds of dishes, from soups and curries to fudge and mousse cakes! So it’s about time I used it in my rawnola as well.

Rawnola is a no-bake version of granola, where you just mix all the ingredients together in a bowl or a food processor to get a sweet and crumbly cookie dough-like texture. It’s perfect for those days you’re short on time or when you crave something chewy rather than crunchy. You still get some crunch from the seeds, but the texture is quite different from a baked granola.

I made this batch nut-free and grain-free because I want even those on the most restricted diets to be able to enjoy delicious meals. It mainly consists of seeds like pepitas (pumpkin seeds), sunflower seeds, and chia seeds. Seeds are easier to digest than nuts and are high in minerals such as zinc, manganese, magnesium, iron, and copper. They’re also a good source of protein, omega-3 fatty acids, antioxidants, and fiber, which help stabilize blood sugar and satisfy your cravings. In addition, I included unsweetened coconut flakes and raw cacao nibs for a deeper flavor and further minerals, vitamins, and healthy fats.

Chocolate Pumpkin Rawnola

Serves 14 (1/4 cup servings)

Ingredients

  • 1/3 cup dates, pitted
  • 1/2 cup pumpkin (or squash) puree
  • 1 cup raw pumpkin seeds
  • 1 cup raw sunflower seeds
  • 1/4 cup chia seeds
  • 1 cup unsweetened coconut flakes
  • 2 scoops Detox Organics Chocolate Superfoods Powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/2 teaspoon sea salt
  • 2 tablespoons raw cacao nibs

Directions

  1. Add the dates and pumpkin puree to a food processor and pulse a few times to break them up. If you don’t have a food processor, you can chop the dates and mix everything in a large bowl
  2. Add the rest of ingredients and run the machine for few more seconds (or stir vigorously) so that everything is thoroughly combined
  3. Serve in a parfait with coconut yogurt and fruits, on top of smoothie bowls, etc. Store leftovers in an airtight glass jar in the fridge for several weeks
