It’s blueberry season in our corner of the world, so I’ve been stuffing my face with fresh local blueberries and adding them to anything possible! One of my favorite ways to have blueberries is mixed with yogurt, and since I love everything chocolate, I thought why not combine them all together into a luscious cream?! That’s how these dreamy chocolate blueberry tarts were born.

The creamy tart filling couldn’t be any easier to make! Only 2 ingredients needed that you can mix together in a bowl with a spoon! I’ve been having the cream on its own as breakfast or snack whenever I crave a chocolaty treat, but still want to keep it healthy, nutritious, quick, and easy. All you need is plain organic yogurt or your favorite non-dairy yogurt (I used my homemade coconut yogurt) and Detox Organics* chocolate superfoods powder.

No-Bake Chocolate Blueberry Tarts

Yields 5 mini (3-inch) tarts

Ingredients

Crust

  • 1 and 1/4 cups GF rolled oats
  • 3/4 cup walnuts
  • 3/4 cup dates, pitted
  • 1 tablespoon flax seeds
  • 2 tablespoons raw cacao powder
  • 1-2 tablespoons water (as needed)
  • Pinch of sea salt

Chocolate Filling

  • 1 cup coconut yogurt
  • 2 scoops Detox Organics Chocolate Superfoods Powder
  • 1/2 cup blueberries

Directions

  1. For the crust: Add all crust ingredients to a food processor and process until it crumbles. Start with 1 tablespoon of water and add more if necessary to get a sticky texture
  2. Lightly grease 4 tart shells with ½ tsp of coconut oil and press the mixture evenly into the bottom and sides of the shells. Freeze while you prepare the filling
  3. For the filling: Add coconut yogurt into a bowl, add the chocolate powder and stir to combine {See Note}
  4. Pour the chocolate filling into the prepared tart shells, top with blueberries and a few sprigs of mint if desired, and chill for 1-2 hours in the fridge before serving. Enjoy and store leftovers in an air-tight container in the fridge

NOTE: I find the filling to be sweet enough, but if you prefer a sweeter taste, you can add a bit of maple syrup (start with 1 teaspoon) and taste test to adjust.
