This Spring Detox Smoothie/Chia Parfait is the perfect way to reset your digestive system and support your liver into disposing of all the impurities and toxins. Filled with detoxifying and anti-inflammatory ingredients such as bitter greens, lemon, ginger, turmeric, avocado, blueberries and chia seeds, this delicious smoothie will make you glow from the inside out. But don’t let these ingredients scare you! I promise the end result is delightful and something anyone would enjoy 🙂

Did you know that chia seeds can absorb up to 12 times their volume in water? These high fiber foods can slow down digestion, increase your feeling of fullness, clean out your digestive tract and help rid the body of toxins.

Bitter greens (like dandelion, kale, collard and chard), lemon, avocado, apple and turmeric are some of the best foods to support the liver, which is our body’s major detoxifying organ.

Ginger and turmeric have incredible anti-inflammatory properties, and blueberries are the definition of a true superfood-filled with phytochemicals, minerals and vitamins such as iron, calcium, phosphorous, magnesium, zinc and vitamin K to name a few.

So without further ado, let’s take a look at the recipe:

Spring Detox Smoothie/Chia Parfait Recipe

Serves 1

Ingredients

Chia Pudding

  • 2 tablespoons chia seeds
  • 6 tablespoons water, nut milk, coconut kefir or other liquid of choice
  • 1/4 cup blueberries

Smoothie

  • 1 cup green chard (sub with spinach for a milder flavor)
  • A handful of dandelion greens (optional, but recommended)
  • 1 cup coconut water
  • 1/2 avocado
  • 1 apple
  • 1 banana
  • Small piece of lemon (with skin and rind – make sure it’s organic) {see Note}
  • 1-inch piece fresh ginger
  • 1/4-1/2 teaspoon turmeric powder (or use 1/2-inch piece fresh turmeric root)
  • Dash of black pepper (to help with the absorption of turmeric)

Directions:

  1. First mix the chia seeds with water, stirring a few times, and let it sit for 10-15 minutes until it gels
  2. In the meantime, start making the smoothie by throwing the first 3 ingredients into the blender (greens and coconut water) and blending for 30-40 seconds
  3. Then add the rest of the ingredients and blend until smooth
  4. To assemble the parfait, add the chia pudding to a glass or jar. Mix in the blueberries and mash them with a fork if desired. Top with the green smoothie and enjoy!

NOTE: I used 1/4 a lemon, but since lemon rind is rather bitter, if you are new to green smoothies, start with a smaller amount and work your way up gradually. Alternatively, you could only use lemon juice, but most of the nutrients are present in the rind and skin, so I highly recommend using it as a whole.
