Celebrating the final days of summer with some more delicious fruity popsicles!
This time I used up fresh local organic peaches from the farmer’s market to make some dairy-free peaches and cream popsicles. I had some kiwis as well, so decided to pair them with matcha for an extra pop of color.
To get that creamy consistency while going dairy-free I added 1/2 cup of soaked cashews, using 1/4 cup for each flavor combo. Full-fat coconut milk is another ingredient I love in popsicles for a rich and thick texture. I mixed in some more into the last matcha kiwi popsicle to get a marbled look. Another reason why I love and use coconut milk so much is that it’s a great source of lauric acid, a medium-chain fatty acid that is easily absorbed and used by the body for energy. Although the fat in coconut is mainly saturated, there are various studies that show it can actually help lower cholesterol levels, improve blood pressure, and prevent heart attacks or strokes (1,2,3,4,5).
You can make these popsicles with any fruits you have available. I bet they would be equally delicious with nectarines, mango, papaya, strawberries, blueberries, or other berries of choice.

PEACHES & CREAM POPSICLES
Yields 3
Ingredients
- 1/4 cup cashews, soaked for 2+ hours
- 1/2 cup coconut milk (full-fat)
- 1/4 teaspoon vanilla bean powder (or pure vanilla extract)
- 1 teaspoon baobab powder (optional)
- 1/2 ripe banana
- 1 large ripe peach, cut in half
Directions
- Add all ingredients to the blender except for 1/2 of the peach and blend until smooth
- Dice the remaining half of the peach and divide to fill the bottom of the popsicle molds
- Pour the mixture on top and place in the freezer to set. Insert popsicle sticks after 45 minutes
- Let them freeze for another 2 hours to set, then thaw for 5-10 minutes, and enjoy!
MATCHA KIWI POPSICLES
Yields 3
Ingredients
- 1/4 cup cashews, soaked for 2+ hours
- 1/2 cup coconut milk (full-fat)
- 1/4 teaspoon vanilla bean powder (or pure vanilla extract)
- 1-2 teaspoons pure maple syrup
- 1 teaspoon matcha powder
- 1 kiwi
Directions
- Add all ingredients except for a few pieces of kiwi to the blender and blend until smooth
- Throw the kiwi slices into the popsicle molds then pour in the mixture
- Place in the freezer for 45 minutes, then insert popsicle sticks
- Let them freeze for another 2 hours to set, then thaw for 5-10 minutes, and enjoy!
