Using up the last peaches of the season in this delicious vegan and gluten-free peach crumble.

I had some traditional peach crumble when I was on vacation a few weeks ago and even though it was really tasty, I couldn’t have more than two spoonfuls cause it was just way too sweet!

It’s amazing how quickly your taste buds adjust to whole foods once you cut out sugar and processed junk–so much so that you no longer enjoy the traditional desserts or candy bars you once couldn’t live without! I used to have such a huge sweet tooth. I could eat a whole box of sweets without hesitation, but now I just can’t, even if I wanted to! The body and mind are SO powerful and if you give them the right fuel you’ll be amazed at how much they can accomplish!

Now without further ado, here’s the recipe for this easy delicious crumble. Enjoy!

Peach Crumble Recipe

Filling Ingredients

  • 4 medium-sized peaches, sliced
  • 1 teaspoon ground cinnamon
  • Splash of water

Crumble Ingredients

  • 1 cup rolled oats (use gluten-free oats if you wish)
  • 1 cup walnuts
  • 1/2 cup unsweetened shredded coconut
  • 1 tablespoon unrefined coconut oil, melted
  • 1 tablespoon pure maple syrup

Directions

  1. Add sliced peaches to a small pot with a splash of water, bring to a gentle boil and reduce heat to low to simmer. Let it cook until the liquid starts to thicken, about 10 minutes. Then add cinnamon, stir and remove from heat
  2. Meanwhile, preheat oven to 350 F. Throw in all crumble ingredients in the food processor and process until you get crumbs
  3. Pour the cooked peaches in the baking dish, top with the crumble and let it bake in the oven for about 15 minutes, until golden on top. Enjoy!
