How can I best describe these brownies?? Well, fudgy, dense, rich, and chocolatey are the first words that come to mind. I made these No-Bake Sweet Potato Brownies last weekend after a night out with friends. I came home late at night, craving something smooth and chocolatey that could be made in less than 15 minutes. After all, I wanted to crash on the couch under my cozy blanket with a warm cup of tea and Netflix as soon as possible 😉 Opened the fridge and found a single baked sweet potato and that’s when I saw these brownies in my head!

They consist of only 6 ingredients–most of which you probably already have in the pantry/fridge–with no baking required. No gluten, no dairy, and no eggs either! The best part about that is you can nibble on the batter as you’re preparing them without having to worry about foodborne illnesses caused by raw eggs 😉

Sweet Potatoes Nutrition

Sweet potatoes give these brownies the dense and rich texture that makes them similar to fudge. Not only do sweet potatoes taste like a treat and work perfectly in desserts, but they also provide some incredible health benefits. Sweet potatoes are an excellent beta-carotene and vitamin A source, which shines through their beautiful orange flesh. They are also high in vitamin C, manganese, copper, various B vitamins, vitamin E, potassium, and fiber. The combination of beta-carotene, vitamin C, and vitamin E makes sweet potatoes one heck of a “beauty food” that contributes to a glowing complexion and vibrant hair.

No-Bake Sweet Potato Brownies (Vegan, Paleo)

Ingredients

  • 1/2 cup coconut flour
  • 1/3 cup raw cacao powder
  • 1/2 cup nut or seed butter of choice e.g. almond butter, sunflower seed butter
  • 1/3 cup pure maple syrup
  • 1/2 cup mashed sweet potato
  • Pinch of unrefined sea salt
  • Optional: Handful of dark chocolate chips walnuts or pecans

Instructions

  • Line a 6x8 inch pan with parchment paper on the bottom and sides.
  • Add all the ingredients (minus chocolate chips or nuts if using) to the food processor and blitz until smooth. If using chocolate chips or nuts fold them in and stir to distribute them into the batter.
  • Pour the batter into the lined pan and refrigerate for at least 30 minutes to firm up. Then take it out, cut into squares and enjoy! Store leftovers in the fridge for up to a week or in the freezer for up to 3 months.
