This no-bake pecan pie is a delicious and healthy alternative to the traditional version that’s free from refined sugar, dairy, eggs, gluten, and grains. It’s made with only 4 wholesome ingredients, it’s super simple and fool-proof with no baking involved. You can prepare it ahead of time and store in the fridge to serve as dessert when entertaining or take as a personal gift to a dinner party this holiday season.
One of the best things I discovered after moving to Canada was pecan pie! I can’t believe I’d never had it before in my life! It is absolutely delicious… gooey and crunchy at the same time. Unfortunately, the store-bought version is one of the most unhealthy things out there! It’s quite high in white sugar, additives, and preservatives, and the crust made out of refined flour and rancid oils, only makes matters worse!
Luckily there’s this healthier, much more nutritious version made with high-quality wholesome ingredients that tastes just as–if not more–delicious! Yes, it’s still high in sugar, so you should not overeat. However, the sugar is merely coming from natural whole foods, dates.
One of the best things about eating whole foods is that it makes it actually difficult to overeat. So even if you want to eat more than a couple of slices, you really can’t, considering you’ve had proper lunch/dinner beforehand. Real food fills you up faster, thanks to all the fiber and nutrients, and makes you feel satisfied.
On the other hand, processed foods contain additives and preservatives that trick your brain into thinking you’re hungry and need to eat more. Have you ever struggled to stop eating “just one more” piece of a store-bought pie? You’re not alone! And no, you don’t have issues with self-control! So, as I always tell my clients, one of the easiest ways to lose weight is to make your own meals or get home-cooked foods from places that offer them in your area.

No-Bake Pecan Pie
Serves 9-10
Ingredients
Crust
- 1 and 1/2 cup cashews
- 1 cup unsweetened coconut flakes
- 4 dates, pitted
- 1 tablespoon water
Filling
- 1 cup dates, pitted and chopped
- 3/4 cup filtered water
- 1 and 1/2 cups pecans
- Pinch of unrefined sea salt
Directions
- For the Crust: Add all crust ingredients to a food processor and process until crumbled
- Line your pie dish with parchment paper (I used a square 7×7 inch dish) and press the crust mixture down evenly onto the dish and place in the freezer to firm up while you prepare the filling
- For the Filling: Place the chopped dates in a saucepan and cover with water. Bring to a boil, then reduce heat to simmer until a thick gooey mixture forms (about 10-15 minutes). Add more water if necessary
- Stir in 1/2 cup of pecans and sea salt, remove from heat and let it cool
- Assemble: Take the crust out of the freezer and pour the filling on top. Decorate with the remaining pecans and place in the freezer for 30 minutes or the fridge for 2 hours to firm up. Enjoy and store leftovers in the fridge or freezer
