One of my most favorite treats to enjoy in the heat of summer is a popsicle. It brings back such great memories from my childhood and is such a fun yummy way to cool down. When I first purchased my popsicle molds I started freezing my everyday green smoothie leftovers and would snack on them when I was craving something cold and sweet in the evening. As much as I like those random “green smoothie popsicles”, they don’t quite taste like the popsicles I used to have as a kid. Growing up, my favorite popsicle flavor was chocolate fudge. Therefore, I realized coming up with a healthier version that tastes just as creamy and delicious – if not more – was long overdue! So, here’s my first attempt at vegan, nut-free and banana-free chocolate fudge popsicles. Hope you enjoy them as much as hubby and I did!
Chocolate Fudge Popsicles Recipe
Yields 4
Ingredients
- 1 cup coconut milk (full fat)
- 3 tablespoons raw cacao powder
- 3 dates, pitted
- 1-3 tablespoon(s) pure maple syrup
- 1 avocado
- Dash of unrefined sea salt
Directions
- Throw all ingredients into a blender (start with 1 tablespoon maple syrup) and blend until smooth and creamy
- Taste test and adjust sweetness based on your personal preference
- Pour into popsicles molds and freeze until firm, about 4 hours. Enjoy!
