These vegan and gluten-free chocolate coconut macaroons are my newest obsession! They’re so ridiculously delicious that I’ve made them three times already in the past week! With their rich chocolaty taste and a melt-in-your-mouth yet crunchy texture, I can’t think of a better way to healthfully satisfy the sweet tooth.
They consist of only 6 ingredients–sea salt included–and take less than 20 minutes to prepare! But the best part in my opinion is that you only need 1 bowl to make them, so no food processor or blender required. Seriously, one of my easiest, most fuss-free recipes to date!
These heavenly bites are high in healthy fats–thanks to the unsweetened coconut flakes and coconut oil–and low in sugar, which is why they don’t negatively affect your blood sugar levels like traditional sweets. Their sweetness comes from 1 tablespoon of raw honey (for the entire batch of 20) and a scoop of Detox Organics* chocolate superfoods powder that contains only 2 grams of unrefined sugar. For a vegan version, you can replace raw honey with another sticky natural sweetener such as date syrup or molasses.

Chocolate Coconut Macaroons
Yields 20 pieces
Ingredients
- 2 cups unsweetened shredded coconut
- 1/4 cup raw cacao powder
- 1 scoop Detox Organics Chocolate Superfoods Powder
- 4 tablespoons coconut oil, melted
- 1 tablespoon raw honey (date syrup or molasses for vegan)
- Pinch of sea salt
Directions
- Add all ingredients to a medium-sized bowl and thoroughly combine with a spatula or your hands
- Use a small scoop or a measuring tablespoon to form balls and place on a lined baking dish. (Don’t worry if the balls appear loose. They will firm up once cooled)
- Refrigerate for 1 hour or freeze for 15 minutes until firm. Enjoy as is or drizzled with melted coconut butter, tahini, dark chocolate sauce, or a dollop of coconut yogurt!
NOTES:
- Store leftovers in the fridge for best results. They can also be stored at room temperature as long as it’s not hot outside.
- If not using Detox Organics, use 1/3 cup raw cacao powder and an additional 1-2 teaspoons of raw honey, syrup, or molasses if needed.
