This almond milk chia pudding layered with blueberries and topped off with bananas and coconut flakes is one of the most popular recipes on the blog, and for a reason! Yes, healthy food can and should taste THIS good! Just because something is good for you doesn’t mean it has to taste bland, boring or completely gross! That what my blog is all about; to show you how to eat healthy without making any sacrifices to the taste. This delicious pudding is one great example!
Blueberry Banana Chia Pudding Recipe
Ingredients
- 1/4 cup chia seeds
- 1 cup unsweetened almond or coconut milk
- 1 tablespoon pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup blueberries
- 1/2 banana, sliced
- A handful of unsweetened coconut flakes
Directions
- Combine the chia seeds, nut milk, maple syrup and vanilla extract in a jar and give it a good stir
- Let it set for at least 20 minutes or ideally overnight in the fridge for a pudding consistency
- When ready to serve, place half the mixture in a jar and top with half the blueberries. Continue layering with the rest of the chia pudding and blueberries
- Dress with banana slices and coconut chips and enjoy!
