I love banana bread, walnuts, and chocolate, so if a recipe brought all of them together, well then, I’d be in heaven!
That’s exactly what I was thinking when creating this delicious cake! I don’t bake much but when I do, I love recipes that are gluten-free, simple, and composed of few ingredients and instructions. Just like this Gluten-free Plum Cake (my dad’s all time fave) and this Orange Spice Olive Oil Cake. I adapted this one from my favorite banana bread recipe by Kristin Marr and decided to top it with a luscious chocolate frosting.
As you can see by looking at the ingredients, this cake is as wholesome and nutritious as it gets! No refined flour, no gluten, no dairy, no processed sugar, and all high-quality ingredients. But I was on a mission to make it as nutritious as possible by sneaking in not one, not two, but 25 fruits and vegetables! How on earth is that possible? This recipe includes eggs, but if you wish to make it vegan you can use flax eggs instead. So in this case, you can substitute the 3 eggs with 3 tablespoons of finely ground flax seeds mixed with 1/2 cup water. Do this before you get started since you want the mixture to sit for 5-10 minutes to thicken.
You know the cake is ready when the top gets golden brown in color. It took me 55 minutes, but oven temperatures can vary from model to model, so this might take shorter or longer for you. Keep an eye on it after the 50-minute mark and do the toothpick test to make sure it’s cooked all the way through.

GF Banana Walnut Cake with Chocolate Frosting
Serves 8
Ingredients
Banana Walnut Cake
- 1 and 1/2 cups almond flour
- 1 cup light buckwheat flour
- 1 teaspoon cinnamon, ground
- 1/2 teaspoon baking soda
- 3 organic eggs
- 3 medium ripe bananas, mashed
- 1/3 cup pure maple syrup
- 1/4 cup organic plain yogurt (or non-dairy yogurt)
- 1 teaspoon pure vanilla extract
- 1/2 cup walnuts, chopped
Chocolate Frosting
- 1/4 cup coconut oil, melted
- 5 scoops Detox Organics Chocolate Superfoods Powder
- 1/2 cup full-fat coconut milk
- 1/4 cup pure maple syrup
- Pinch of sea salt
Directions
- Preheat the oven to 350 F and line a 6-inch cake pan with parchment paper
- For the cake: In a large bowl mix together the dry ingredients: flour, cinnamon, and baking soda
- In a medium size bowl, whisk together the eggs. Add in the mashed bananas, maple syrup, yogurt, and vanilla. Whisk together until combined
- Pour the wet ingredients into the dry ingredients and stir until combined. Then mix in the chopped walnuts
- Pour the batter into the lined pan and bake for around 55 minutes until the top gets golden brown and a toothpick inserted comes out clean. Let the cake cool for 15 minutes before removing it from the pan
- For the frosting: Melt coconut oil over low heat if it’s solid. Remove from heat and pour into a small bowl. Mix in the chocolate powder and stir to combine. Add the coconut milk, maple syrup, and sea salt and stir until you get a smooth and thick frosting
- Pour the frosting over the cake and use the back of a spoon or spatula to spread it as you wish. Decorate with more walnuts if desired and enjoy!
