Ever since I made a batch of cashew butter a couple of weeks ago I’ve been thinking of turning some of it into fudge, similar to an older recipe of mine–these heavenly Peanut Butter & Jelly Fudge Bites. Cashew butter works like a charm in this recipe, in fact I have to say it’s my favorite among other versions I’ve tried with peanut and almond butter. But any kind of nut or seed butter would work well here. I was feeling more like chocolate this time, so skipped the jelly topping and replaced it with a chocolate fudge that is equally–if not more–delicious.
These soft, chewy, melt-in-your-mouth little bites of heaven are also super quick and easy to make. All you need is 5 ingredients–including sea salt–and a small pan to heat up and mix the ingredients in. Then pour into a mold and freeze or refrigerate to set. That’s it!

Cashew Butter Chocolate Fudge Bites
Yields 8 bites
Ingredients
Cashew Butter Fudge
- 1/4 cup coconut oil
- 1/2 cup cashew butter
- 1/4 cup pure maple syrup
- Pinch of unrefined sea salt
Chocolate Fudge
- 4 teaspoons raw cacao powder
- 1 tablespoon coconut oil
- 1 teaspoon pure maple syrup
Directions
- For the Cashew Butter Fudge: Melt coconut oil in small pot over low heat if it’s solid. Add the cashew butter and stir until it melts into a runny mixture. Remove from heat, add maple syrup and sea salt and stir to combine
- Pour half the mixture into silicone molds or a lined muffin tin, filling each cup about half way through. Transfer to the freezer while you prepare the chocolate
- For the Chocolate Fudge: To the remaining half of the cashew butter mix, add cacao powder, more coconut oil and maple syrup and stir to combine over low heat
- To Assemble: Take the tin out of the freezer and fill up the cups with the chocolate mixture. Transfer back to the freezer or fridge for the fudge bites to set (1 hour in the freezer or ~2 hours in the fridge). Store leftovers in the fridge or freezer. Enjoy!
