Well, look no further, I’ve got you covered! These superfood chocolate macaroons are so easy to make, you don’t even need a food processor! Just a bowl to mix in all the ingredients and an oven to bake them in!

SuperFood Chocolate Macaroons

Yields about 18 cookies

Ingredients

  • 2 tablespoons chia seeds
  • 6 tablespoons water
  • 1 cup unsweetened coconut flakes
  • 3 tablespoons raw cacao or carob powder
  • 3 tablespoons hemp hearts
  • 1/4 cup almond butter
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon vanilla bean powder (or pure vanilla extract)
  • Pinch of unrefined sea salt

Directions

  1. Preheat the oven to 350 F and line a baking sheet with parchment paper
  2. In a small cup mix the chia seeds with water. Stir a few times and let it sit until it forms a gel
  3. Pour the rest of the ingredients into a bowl and mix with a spoon or your hands to fully combine. Fold in the chia gel and mix some more to evenly distribute
  4. Form into cookies, spread onto the baking sheet and let it cook in the oven for 8-10 minutes. Flip the cookies and let them cook on the other side for 4 additional minutes
  5. Let them cool down and enjoy! Store the leftovers in an airtight container in the fridge
