Just a bowl to mix in all the ingredients and an oven to bake them in!
SuperFood Chocolate Macaroons
Yields about 18 cookies
Ingredients
- 2 tablespoons chia seeds
- 6 tablespoons water
- 1 cup unsweetened coconut flakes
- 3 tablespoons raw cacao or carob powder
- 3 tablespoons hemp hearts
- 1/4 cup almond butter
- 1/4 cup pure maple syrup
- 1/2 teaspoon vanilla bean powder (or pure vanilla extract)
- Pinch of unrefined sea salt
Directions
- Preheat the oven to 350 F and line a baking sheet with parchment paper
- In a small cup mix the chia seeds with water. Stir a few times and let it sit until it forms a gel
- Pour the rest of the ingredients into a bowl and mix with a spoon or your hands to fully combine. Fold in the chia gel and mix some more to evenly distribute
- Form into cookies, spread onto the baking sheet and let it cook in the oven for 8-10 minutes. Flip the cookies and let them cook on the other side for 4 additional minutes
- Let them cool down and enjoy! Store the leftovers in an airtight container in the fridge
