Valentine’s weekend is coming up and if you are looking for a delicious and fancy-looking breakfast recipe to impress your loved one(s), no need to look any further! French toast is one of my go-to menu items when I want to make something special for my hubby or when I am hosting a brunch party for family or friends. The best part is that despite looking very impressive, it is actually super simple and quick to make, taking less than 20 minutes from start to finish, including baking time!
If I am making it for guests I use coconut bread from the local Asian market (super delicious but not all so healthy), which results in the fluffiest, most delectable French toast ever! I always get compliments on it from my guests and get asked for the recipe. But when I am making it for myself and hubby, I try to make it healthier by using my own favorite kind of bread, real sourdough that has been fermented for over 24 hours without any added yeast. The fermentation process leads to the generation of beneficial bacteria that help predigest the starches in the grain and make it much easier on our digestive system. However, the texture will be more on the denser, drier side with sourdough, so if you prefer a lighter and fluffier French toast, the next best healthy choice is sprouted multi-grain bread or a good quality gluten-free one.
This time I served my French toast with a generous topping of homemade yogurt mixed with some raw honey, vanilla bean powder and rosemary, a side of banana and pear slices and some pomegranate arils. Absolutely delicious and a great way to start the weekend!
3-Ingredient Healthy French Toast Recipe
Yields 4 Servings
Ingredients
- 8 slices of sprouted wholegrain bread, sourdough, or gluten-free toast
- 2 eggs
- 3/4 cup full- fat coconut milk (almond or any other plant-based milk also works)
Spice It Up
- 1 teaspoon vanilla bean powder or pure vanilla extract
- 1/2 teaspoon cinnamon
- 2 tablespoons pure maple syrup (optional)
Directions
- Preheat the oven to 450 F and line a baking sheet with parchment paper
- Whisk the eggs in a bowl, then add milk of choice, vanilla, cinnamon and maple syrup (if using) and mix well to fully combine
- Dip bread in the egg mixture ensuring both sides are fully soaked, and place it on the baking sheet. Repeat until all slices are coated
- Insert the baking sheet in the oven and cook for about 8 minutes. Remove from the oven, flip the toasts and let them cook on the other side for another 4 minutes
- Top with maple syrup, Greek yogurt and/or fruits of choice and enjoy!
