No-Bake Orange Chocolate Chip Cookies

You only need 15 minutes to prepare these no-bake orange chocolate chip cookies. They're soft and chewy with hints of orange and chunks of dark chocolate and contain NO dairy, eggs, gluten, grains, or refined sugar.

Ingredients

  • 1 cup raw cashews
  • 7 small (about 1/2 cup) dates pitted
  • 1 scoop (25.9 grams) Genuine Health fermented vegan proteins+ unflavoured
  • 1/2 cup unsweetened coconut flakes
  • 1 tablespoon coconut oil
  • 1 orange, zested preferably organic
  • Pinch of unrefined sea salt
  • 1/4 cup dark chocolate chips

Instructions

  • Add all ingredients except dark chocolate chips to the food processor and process until a sticky crumble forms. Stir in the chocolate chips.
  • Scoop a spoonful of dough, roll into a ball, press down with a fork to shape a cookie, and place it on a lined cookie sheet. Repeat until all the dough is used.
  • Place the cookie sheet in the fridge for about an hour until cookies are firm. Enjoy and store leftovers in an airtight container in the fridge for about a week or freeze for up to 3 months.
