Healthy Raffaello Bites
Yields ~18 pieces
Ingredients
- 1 cup unsweetened coconut flakes + 3 tablespoons to coat
- 4 tablespoons coconut butter
- 1/2 cup raw almonds or cashews
- 1 tablespoon raw honey or pure maple syrup
- 1/2 teaspoon pure vanilla extract
- About 18 raw almonds for the core
Directions
- Blend the first 5 ingredients in the food processor until a doughy texture forms
- Roll into balls and push one almond inside each ball
- Dip into coconut flakes to coat and enjoy!
