I have to admit as much as I love smoothies and chia pudding, sometimes I get bored and want to try something new for breakfast. Especially with my parents visiting, I wanted to make them something healthy that not only appeals to the eyes, but also to their rather particular taste buds!

Since they both love yogurt and sweets, I decided to go for a yogurt & granola parfait. I was sure they would love that. But being a nutritionist, even homemade plant-based yogurt and sugar-free granola made with coconut oil and maple syrup is not healthy enough 😉 I couldn’t resist adding greens, so I mixed in a scoop of Genuine Health’s vegan greens+ O, a unique blend of colorful and nourishing plant ingredients, providing the most abundant source of health-promoting nutrients in a single serving! Superfood Coconut Yogurt Granola Parfait

Serves 1-2

Ingredients

Directions

  1. Mix the yogurt with honey or maple syrup, vanilla, and greens+ powder. Stir until evenly combined
  2. Layer half the granola at the bottom of the serving glass and pour half the yogurt mixture on top. Repeat once more, reserving a spoonful of the granola for the top
  3. Garnish with remaining granola and strawberries and enjoy!

 NOTE: You can substitute coconut yogurt with organic Greek yogurt or another non-dairy yogurt of choice.
