Breakfast is my favorite meal of the day. I often think about what I’ll be having for breakfast the next day when I go to bed at night and sometimes even dream about it! I like to mix things up and try different things all the time.

That’s how I came up with this chocolatey bowl of deliciousness that not only satisfies the strongest sweet tooth, but is also loaded with ingredients that are good for you and your gut! Throw out that ready-made packet of oatmeal that tastes like table sugar and reward your taste buds and your entire existence with this luscious and nutritious breakfast!

Peanut Butter & Chocolate Fermented Oatmeal Recipe

Serves 2

Ingredients

  • 1 cup gluten-free steel-cut or rolled oats
  • 1 cup filtered water (to cover the oats)
  • 1 teaspoon apple cider vinegar
  • 1 cup unsweetened almond milk
  • 2 tablespoons peanut butter
  • 3 tablespoons raw cacao powder
  • 1 banana
  • 2 dates, pitted
  • 1/4 cup shredded unsweetened coconut
  • Topping Options: handful of raw cacao nibs, chocolate chips, berries, banana coins, nuts, shredded coconuts, peanut butter, chia pudding, or anything else you desire;)

Directions

  1. Add oats to a bowl, cover with water and add apple cider vinegar. Let it sit on the counter overnight for the oats to ferment (7-24 hours)
  2. When ready to serve, throw all ingredients in the blender (minus topping ingredients) and blend until the desired consistency is reached
  3. Pour into bowls, cover with your favorite toppings and enjoy!
